Beef heart recipe

Can the beefheart recipe still be used without the beefheart or with something in it's place?  I have been to like 5 different buthers and none of them had beef heart. 

I need help please

Just a thought (ouch), could you use fish instead of meat or the chicken livers.  so as to give the fish a change the flavour.

I don't see why not.  Typically heart and tongue are cheaper and have less mercury.
