if you have a male and a female is it definate that they will mate or are the picky about there partners?

With Convicts, male + female = eggs  Grin  As long as both fish are ready to breed they should be quite happy with each other.  Just keep an eye on any possible aggression, as often males are ready to breed at an earlier age than females.  If he's ready and she's not, he could knock her around some  Undecided

my female most of the time follows the male around kissing him and its the male that doesnt seem interested

Convicts for sure.  Other fish can be a little more selective.
